Oven temperatures throughout this cookbook are fan forced. If you are using a conventional oven, increase the temperature by 20°C to achieve the same result.

All measures throughout this cookbook are given by weight to ensure consistency. Using a reliable set of digital scales will give you the best and most accurate results every time.

Fan Forced vs Conventional: Fan forced ovens circulate hot air around the food, cooking it faster and more evenly. If your oven runs hot, you may need to reduce the temperature slightly. Always check your oven is properly preheated before placing anything inside.

Why Weight over Volume: A cup of flour can vary by up to 30% depending on how it is scooped. Weight measurements remove that variable entirely, giving you consistent results whether you are making a recipe for the first time or the fiftieth.
