Notes
Gelatine: Bloom the gold leaf gelatine in plenty of cold water for 5–10 minutes, or until completely softened. Then, gently squeeze out the excess water before stirring it into the warm glaze. 55% dark chocolate: Use this in the burnt caramel chocolate mousse. Its slightly lower cocoa percentage gives the mousse a smoother, softer texture and balances the caramel. 70% dark chocolate: Use this in the Sacher sponge. The higher cocoa content gives a deeper chocolate flavour and adds extra structure through the cocoa butter and cocoa solids.
